The perfet winter warmer
As many of you may be trying out Veganuary this year, I thought I'd share with you a great recipe from one of my favourite YouTube Channels - Jedz Inaczej.
The recipe is for a quick, simple and vegan dish of green lentils with coconut milk and turmeric. It really is a perfect warmer for those cold January days!
Green lentils are a source of B vitamins, zinc, magnesium and potassium, while ginger and turmeric are both highly anti-inflammatory, making your meal extra nutritious as well as extra tasty.
For the recipe you will need:
1 spoon of grated ginger
1 onion
1 garlic
3 grated carrots
½ pepper (green or red)
1 spoon of turmeric
Handful of coriander (or parsley)
Tin of coconut milk
Half of a glass of green lentils
Cherry tomatoes
Chilli flakes
Salt and pepper
Heat up a pan with a little bit of olive oil, add the onion, garlic and ginger and fry until golden. Once golden, add the pepper and carrots.
Fry for few minutes before adding salt, pepper and chilli flakes according to your preferences. Add raw, washed green lentils, and turmeric.
Add coconut milk and cook for around 15 minutes, allowing the lentils to cook in the coconut milk. At the end of cooking add chopped plum tomatoes and coriander or parsley, before serving.
This should be enough for a lunch portion for two!
